THANK GOD IT’S ALLERGY-FRIENDLY FRIDAY, AGAIN!

Last Friday, we kicked off Allergy Friendly Friday with a bang! I was delighted by how many links were shared, and really excited to see how many people are doing allergy-friendly blogging!

It’s great to find new recipes,  hear your stories, and tips for cooking allergy-free.  For those of us on restricted diets, coming up with new inspiration day in and day out, can be a daunting task. So, thank you all for sharing your lovely links here. I encourage you to do so as often as you like. And remember, I specialize in creating gluten-free recipes that are free of the top 8 food allergens, but yours don’t have to be. They just have to be allergy-friendly in SOME way.

All the recipes from last Friday were outstanding. They were all highlights!  A few of the recipes I’ll be trying out first are:

    Thank you so very much for including my Rice recipe! I hope everyone has good luck with it, please email or comment with any questions on my blog.

    This time I shared my favorite salad recipe, you have a base of veggies and lettuce with brown rice couscous or quinoa and top it with roasted curry chickpeas and cilantro lime dressing. My toddler loves to dip the chickpeas in dressing. 🙂

    I submitted the Chocolate Wacky Cupcakes. The ones pictured have Enjoy Life chips added in too. They are gluten free, Top 8 Free, corn & potato free. I discovered after making them, that my little boy has developed an allergy to guar gum which I used in these (and he can’t have xanthan gum either) so I’m going to have to reformulate the recipe for him.

    Alisa, that cookie of yours is amazing. Re: the round up, that’s why i started this. I looked around and felt like there was no hub for allergy-free recipes. THere is a community for gf bloggers, and vegan bloggers, etc, but not allergy-free. So I hope it can be like mini foodista for allergy-free bloggers, here on fridays. A link feed, so to speak. Thanks for sharing again! Keep ’em coming!

    Cybele, I had forgotten that Authentic Foods had a corn free xanthan gum! Do you happen to know what it is derived from? I will plan on giving them a call on Monday when they are open to ask.

    Not sure what it’s derived from but they swear there is no trace of corn in it. Calling them is a good idea!

    The corn free xanthan gum makes a huge difference in a few items I’ve tried with it, I don’t know what to do with all my extra guar gum now. 🙂

  21. I’m so glad I found your Allergy Friendly Friday! There are some good-looking recipes there already 🙂

    We often have gluten-free vegetable soup in our home… especially on cold days…but most of the time it’s the traditional vegetable soup. But, this vegetable soup has Italian veggies in it for a change, and it turned out well. It’s an easy slow-cooker recipe, which is especially good on a weekday. Best of all, even my husband liked it!

    It is gluten-free (no wheat, barley, rye or uncertified oats). It’s also dairy-free, egg-free, lactose-free and nut-free.

    I just got off the phone with Authentic Foods. The man I spoke with assured me that they tested their xanthan gum and there is no trace of corn in it, but would only say the bacteria is grown on a “sugar syrup.” When I asked what that sugar was he repeated that it was tested and no corn is in it, finally admitted he didn’t know what the syrup was and it might be corn syrup. He didn’t comment when I asked if it was soy or wheat or dairy derived (but I did find references on their website to it being dairy free). He said “lots of people eats this and don’t have any problem with it,” and “he answers this question all the time.” Maybe their customer representatives are usually more friendly and helpful and I just got this guy on a bad day, but he certainly didn’t make me want to purchase anything from them.

    I did find this in the store portion of their site: “Authentic Foods xanthan gum is produced by a fermentation process using the bacterium Xanthomonas campestris. This bacteria actually grows on plants found in the cabbage family where the gum was actually discovered. Xanthan Gum is actually the cell wall surface of the bacteria that is separated by a complex enzymatic process. During the fermentation process the bacteria is fed glucose syrup and minerals. When completed, the mixture is pasteurized to kill the bacteria. The gum is then separated by precipitating it using an alcohol substance. The gum is then wash, dried, and milled to a fine powder.”

    That does sound so frustrating. Despite them being seemingly unhelpful, however, please know that I have been assured by them that there is no trace of corn in the xanthan gum. I am pretty sure (though won’t swear) that it’s batch tested, to ensure no traces of any top allergens. I have seen the doc from the manufacturer, showing that it has no traces of any corn. If there is absolutely no corn protein in it, is it still a problem for you? Whether you are comfortable with it is a highly personal choice, of course. I know that from my experience with my own family… I wish there was a third alternative to xanthan gum, and guar gum. Anyone have any ideas?

    My little boy is allergic to the top 8 plus corn and a lot more, so that’s why I was trying to get an answer on the sugar source. He reacts so easily I wanted to be sure it was safe. If I don’t have any success without using gums I may give it a try, but since he’s never had “regular” versions of any food, he doesn’t mind if it comes out a bit different.

    I have had your Whole Foods cookbook since it first came out….and some of your recipes are now our favorites!

    I am sharing my very allergy-adaptable recipe for Caramel Nut (or Seed) buttery popcorn that I hope you and your readers enjoy! I did try to put in my website’s name, but it got cut off. If you would like to adjust my link, please do so. I am at Whole New Mom.
