And the theme of Allergy Friendly Friday this week is, of course, BARBECUE!  Doesn’t have to be actual BBQ, can be salads, or grilled foods, or desserts, or even chips. Whatever you want to post as it relates to the holiday weekend. Allergy Free BBQ recipe links for Memorial Day, please!  Bring on your allergy free Memorial Day and gluten-free Memorial Day recipes, to help us all celebrate an Allergy Friendly Memorial Day Weekend!

Last week actually got us started with some great ideas for our Allergy Free Memorial Day, using the Farmers Market recipes.   I love a BBQ that features lots of fresh produce. So the highlights from last week’s Allergy Friendly Friday were:

  3. I am sharing my recipe for dairy and gluten free Mini Corn Dogs. Make them ahead and then give them a quick heat-up on the grill. The kids (and adults) will love them!

    I would like to know why even just the smell of grill /bbq’s being fired up bother me! I have IBSD , does anyone know why even the smell would bother someone? FORGET about trying to EAT anything that has been on the grill! is it the coals, does one have to use certain kinds of coals. Does anyone else have this prob?~ty,Chris

    I actually just posted something fitting this morning, a recipe you can used leftover baked potatoes for. We were vegetarians before food allergies so we stay away from BBQs but if we do end up going we always bring something safe and meat free. Have a great weekend, everyone!

  12. Happy Friday! I shared my recipe for Cauliflower “Potato” Salad. It tastes almost exactly like a “real” potato salad but is very low carb since it is cauliflower instead.

  13. @Chris – some people are allergic to burning coal. My brother gets really sick and can’t breathe. That is just regular old coal, not even briquettes. A lot of briquettes have chemicals on them, which I can imagine would be even worse!

    Your Mac n’ Cheese look SCRUMPTIOUS!, I use to make Cauliflower au gratin with a kind of “bechamel cream” like yours… It’s delicious! and, your Sunflower Yogurt is breathtaking, looks yummy!

    I’m sorry for not answering you before, I have been working out of my office. My name is a Basque name, vocals and consonants sound like in Spanish except “tx” wich sound like “ch” in Spanish.

    I have to tell you what a success your snickerdoodles recipe (from your Baker’s Handbook) was at my friend’s Memorial Day bbq. I was a bit nervous to bring my favorite allergy-free cookies to a bbq hosted by my chef/caterer friend and his foodie co-workers, none of whom have allergies, are skeptical of my gluten/egg/dairy/seafood/soy free diet, and who swear that food needs a pound of butter and lots of cream to taste good. Not only were they won over at first reluctant (but polite) bite, they ate every last cookie and were fighting over the last few. The pies from the local esteemed bakery never made it out of the box in favor of the cookies. They are now asking if I will ship them more. I can’t thank you enough for helping me in my crusade to infuse the diets of my friends and family with healthy food that actually tastes better than the original version.

[…] As I thought of what dressing to make for this fruity quinoa salad, I spotted a bottle of raspberry balsamic vinegar in my cabinet which I thought would compliment the fruit flavors in this quinoa salad. To make this salad a complete meal, I included black beans (one of my favorite beans) and quinoa, a gluten-free “grain.” For those of you who are not familiar with quinoa, quinoa is actually a seed, not a grain, and is a relative of leafy green vegetables like spinach and Swiss chard. It is sometimes referred to as an ancient grain as it was once considered to be the “gold of the Incas.” Quinoa is a “complete protein,” meaning it contains all 9 essential amino acids. In addition, quinoa is a good source of manganese, magnesium, phosphorus, copper, iron, folate, and fiber. Before cooking quinoa, it must be rinsed thoroughly to remove its bitter-tasing coating (saponins).  Cooked quinoa is fluffy and soft, with a little bit of crunch to it. This Mango Avocado Black Bean Quinoa Salad was a huge hit at the luncheon. I have to say that after I made this quinoa salad, I wondered whether people would even try it as I wasn’t sure whether anyone knew what quinoa was. These fears were allayed, however, as quite a few people knew immediately what quinoa was, and others had never seen or heard of it before, but were willing to try it. In fact, I think there might have been a few quinoa converts in the room. I was especially glad I had made this vegan salad as one woman’s face lit up when she saw it. Being a vegetarian and newly vegan, this quinoa salad, along with some fruit salad made her lunch complete. {A funny story on the side – I actually forgot to add the red bell pepper to the salad before I took a picture for this post as flew out the door this morning. I really wanted to make this salad pretty, so I actually ran back home to grab the pepper along with a knife so I could add it before the luncheon. I had hoped to save a sample of the salad from the luncheon so I could retake the picture, but alas, there wasn’t a bite left!
