SunButter Honey Balls

23

A couple weeks ago, SunButter sent me their new product, SunButter Natural No-Stir Creamy.  Okay, that was the full disclosure part of this post.  I received these goods for free!  But I am no stranger to SunButter, I’ve been using it for almost 10 years, ever since my son Lennon was diagnosed with multiple food allergies in January 2002. We LOVE SunButter in my house.

I was going to bake a batch of SunButter cookies with the sample they sent me, but when I went to do so, I discovered that somebody had already eaten most of the jar!  I guess that kind of says it all for my review.  It got eaten before I could even get to it. That’s how good the new SunButter Natural No-Stir Creamy is.

It’s smooth, and creamy, and has no separation, which is the one thing that always bothered me about SunButter. Well, no more!  I suspect this will also help extend the shelf life of SunButter, reducing the chances of rancidity, though I’m no scientist.  At any rate, it keeps the flavor profile at delicious.

In lieu of the cookies I was going to bake, I decided to dig out one of my old favorites, from my first cookbook, The Whole Foods Allergy Cookbook.  The following recipe is an adaptation of my recipe for “Pumpkin Seed Butter Honey Balls” (phew that’s a mouthful!). I hope you enjoy it as much as my kids and husband do. (note: my husband steals these if I don’t hide them well)

SunButter Honey Balls

This is an easy no-bake snack. I have fond memories of making peanut butter honey balls with my mother after school. So here’s my allergy-free version of that childhood treat. To make them vegan, use agave nectar in place of honey.

Makes 16

  • 1/4 cup + 2 Tablespoons Creamy SunButter
  • 1/4 cup honey
  • 1/2 cup “Better Than Milk” rice powder, original
  • 1/2 cup crushed gf Oat O’s cereal, unsweetened
  • 1/4 cup shredded unsweetened coconut

  1. Cream SunButter and honey, then add “Better Than Milk” powder, and crushed Oat O’s cereal in a large bowl. Scoop out into Tablespoon-sized balls (I use a 1-Tablespoon cookie scoop).  Use hands to mold into smooth balls.  Roll balls in coconut. Chill 2 hours.

  5. Hi Cybele,
Well, high praise indeed on the new no-stir! Although I must admit my fav SunButter “recipe” is by the spoonful. As a SunButter blogger, I appreciate yet another wonderful recipe with great adaptations from you. As a mom always looking for variety, I’m looking forward to baking these up for the gaggle of kids always around our house! Thanks.

Hi Cybele! These look amazing! Think I will have to make them for the ladies in my book club…they always love your recipes! The Oat O’s that I have seen are manufactured in a plant with peanuts and tree nuts (which we can’t have)…would Enjoy Life Crispy Rice Cereal work as a good substitute? As always, thank you for all you do! 🙂

  9. Cybele says:

    Hi Shelly:

Any kind of crunchy cereal will work. And I hope you get your wish!

    best,

    Cybele

    Hello Cybele,

I have been a fan of your cookbook since my daughter was diagnosed with multiple food allergies in 2008. I have made these SunButter honey balls from sunflower seed butter that I make myself. My daughter, husband and extended family members love them. I do too. I am finding it more difficult to find sunflower seeds that are “safe”. I have always avoided buying the SunButter brand since the sunflower seeds are roasted on shared equipment that also roasts soybeans. Have you (or any of your followers) ever had any concerns of or problems with cross contamination? I would love to try the store-bought stuff!! Thank you for all that you do for the allergy community.

    Hello Cybele,

I use to have a mixture of peanut butter and honey that my grandma would spread on my toast. I still do that to this day, but never consider making it into a ball form. That recipe sounds really tasty. I was actually wondering if you have ever used Almond Butter?
