Today is April 29th, the day I was supposed to be born.  (I was born 2 days early on April 27th).  But I still always think of April 29th as my supposed-to-be birthday.  In honor of birthdays, let’s post celebratory allergy-free recipes this week… anything you might want to make on somebody’s special day.   This could be anything from a special breakfast, to a festive lunch, to a dessert.  Anything is fair game! And if you’re not into that theme, then Cinco de Mayo is coming up next week, so what might you be making for that?

Happy Friday Cybele! I am sharing my recipe for Dairy Free Carrot Cake Ice Cream. I checked out other recipes on the Internet with the same concept and mine is definately original! It is also really healthy because there is no added sugar and it is made with carrot juice and shredded carrots.

Happy Birthday-Supposed-To-Be! I’m offering Peanut Butter Cookies with Cashews to celebrate, which are GF and CF. They are made with whole grain and high protein flours, nuts and eggs. If anyone thinks we missed your birthday with this, I’ll be quite happy to celebrate Cinco de Mayo with you.

Oh, I have the Mad Hatter in my head! A very Happy Unbirthday to you!

The theme for my 3 Sisters Stuffed Zucchinis predates Cinco de Mayo, but I think the Mesoamerican staples of corn, beans and squash with quinoa is perfect to celebrate it.
