Allergy-Friendly Friday, on a Friday? Oh my, what a novelty!
Thanks for your patience while I struggled to get back from Iowa. Wow, are those corn fields gorgeous. Such a tragedy that the drought is killing off so many. Though, I couldn’t help but feel a chill as I looked at mile upon mile of what is surely GMO corn. So beautiful, but silently dangerous. What are your thoughts on corn, and particularly GMO corn? Let me know in a comment, if you like. I’m curious. And if you are intolerant, or allergic to it, how does it manifest?

Search “donut muffin” in Google Images, and you’ll come up with literally hundreds of lovely recipes. It seems just about every food blogger has tackled this charming old-fashioned treat.
Supposedly the donut muffin was born early last century, when a baker had leftover donut batter and not enough time to fry it all, so she poured it into a muffin tin. What a happy accident. (more…)
My last allergy-free donuts, “Gluten Free Vegan Baked Cake Donuts“, really pleased my kids. This new recipe for Gluten-Free VeganÂ Yeast Donuts, really pleased my husband, Adam, who grew up working at flea markets every weekend in New York.
Adam took a bite and said they tasted just like Zeppole, the Italian-American ricotta cheese-based donuts. Luckily, my husband loves Zeppole, and thinks it’s pretty cool that I’ve replicated the flavor with absolutely no eggs, gluten (which he is intolerant to), or dairy (which he is allergic to). So let’s just call these Zeppole-Style Gluten-Free Vegan Yeast Donuts. Whoa, that’s a mouthful. Forget about saying it; just pop a donut hole in your mouth instead. Enjoy, and pretend you’re at a street fair, or flea market, or perhaps even an amusement park somewhere on a hot summer night.
Donuts are the new cupcake. I’ve known this for awhile now. Just pop in to any popular bakery, and you’ll find an array of enticing donutty creations. In fact, donuts are now making starring appearances at birthday parties. I too have been known to stick a candle in a donut, and call it a celebration! But what do you do if you can’t eat gluten, dairy, eggs, nuts, or soy? Bake up a batch yourself, and watch them disappear. I created this recipe for my Food Allergy Recipe Challenge on Martha Stewart’s Whole Living Daily. These Gluten-Free, Vegan Donuts are downright delicious. My son Monte shoved one in his mouth and yelled, “awesome!” while spraying crumbs. They are also easy, scrumptious, and low-fat. What kind of donuts do you like best? Let me know by leaving a comment.
